Cosori brands its convection system AdaptIQ Technology: a heating element paired with a fan pushes air in continuous 360° circulation around the food, which is what actually produces the crisp exterior. Hot moving air strips moisture off the surface faster than a still oven can, so you get browning without needing the oil a deep fryer relies on. The heating behind that airflow is rated at 1700 watts on 120-volt power. Temperature runs from 170°F to 400°F, the timer runs from 0 to 60 minutes, and the touchscreen switches between °F and °C. In practice it heats up quickly, cooks faster than a regular oven, and turns out food that is crispy on the outside and tender on the inside. The fan does make itself heard, at roughly the level of a microwave, but not enough to be annoying.
