Wash both plates with warm soapy water and a soft sponge before first use, then dry thoroughly.
Close the iron over a medium flame and heat one side, then flip and heat the other, so both plates are hot before the batter goes in.
Brush a little oil into the keys, pour in enough batter to cover the bottom plate without flooding it, and close the iron.
Cook for a while on the first side, flip the iron, and cook the second side. Open it to check the colour and adjust the flame for the next waffle.
Lift the waffle out with a wooden or silicone tool. Cut it in half if you are sharing, as one waffle is large.
