1. Wash the parts

   Run the jar, filter and lid through the dishwasher or wash them by hand before the first batch. Check the lid seal sits flat in the lid.

2. Add coarse grounds

   Use a coarse grind. You can fill the filter directly, or put the grounds in the jar first and slide the filter down through them once the water is in, which leaves more room for water to circulate.

3. Pour in cold water

   Fill the jar about halfway with cold or room-temperature water before pouring the rest through the filter, since water passes slowly through packed grounds. Never use warm or boiling water in soda lime glass.

4. Seal and wet the grounds

   Screw the lid on fully and turn or swirl the jar gently to wet every ground. Hard shaking can make the lid seep.

5. Steep, strain and store

   Steep for around 12 to 24 hours, in the fridge or on the counter, then lift the filter out and let it drain. Pour gently so the sludge stays at the bottom, and keep the sealed jar in the fridge.
