Water-Seal Butter Keeping
FORAGE keeps butter soft by sealing it off with water rather than refrigerating it. You pour cold water and a pinch of salt into the base, pack softened butter into the mushroom cap, then set the cap into the base so the butter sits just above the water with the air shut out. This is the classic butter bell method, and it is the functional heart of the product. It works well: butter softness and freshness are both praised, with butter that stays smooth and easy to spread straight from the counter. Genuine Fred says it keeps butter spreadable and fresh for up to a month. To get the best from it, change the water every few days and give the cap a wash between refills.
